That's due to this in csu/Makefile:

CFLAGS-.o += $(no-stack-protector)
CFLAGS-.op += $(no-stack-protector)
CFLAGS-.os += $(no-stack-protector)

The version in elf/ *is* compiled with stack protector, but that looks like a mistake to me.
