You could try Qemu - I've not tried eCos on it, but it can load and run
most any PC version of Linux, so it should work fine.

One caveat, at least with pre 0.7 versions. If you use a floppy_startup image to boot qemu from, make sure it is padded out to 512 bytes otherwise it may not work, as qemu will ignore tha last incomplete sector. Alternatively use cdrom or hd images.
