Aww.... why'd you do that?

Upgrading to TeX from unstable may help in Debian.  Make sure you
accept the new configuration files from /etc/texmf/.  I am the Debian
JadeTeX maintainer, and I tried to work closely with the teTeX
maintainer to raise the capacity limits.

Ah, that might be your problem.  After frobbing the memory sizes in
/etc/texmf/, you will need to run 'fmtutil --all' to remake the memory
dumps.  You are just remaking *one* memory dump (latex).  You need to
remake the other ones as well, esp. pdftex and pdflatex.
